Red, White, and Blue Cheesecake by Cat Johnson

 Just in time for the fourth of July another recipe from Cat Johnson

Red, White, and Blue Cheesecake

Crust:
1 1/4 Cup Graham Cracker Crust Mix
5 TB melted butter
3 TB sugar


Cheesecake filling:
3 eggs
1 lb. Cream cheese (2- 8oz. packages)
3/4 cup sugar


Topping:
1 pint sour cream
6 teaspoons sugar
2 teaspoons vanilla extract

Garnish:
Fresh Blueberries
Fresh Strawberries


Crust: Mix graham cracker crumbs, melted butter, and sugar for crust (according to package directions). Line a spring pan with crust.

Cake: Separate eggs. Beat whites until stiff. Separately beat yolks slightly. Mix cream cheese with 3/4 cup sugar. Fold egg whites and yolks into cream cheese mix. Pour into crust-lined pan. Bake 40 minutes at 350 degrees. Then Cool.

Topping: Mix sour cream with sugar and vanilla extract . Pour over cake. Bake 10 minutes. Refrigerate for 12 hours before serving. Garnish and enjoy.
